Healthy Beef and Lentil Burgers

Lentils and Carotino Red Palm & Canola oil add a nutritional punch to this all-American staple. Lentils are high in fiber, folate and manganese, all of which help your body function. They taste a bit nutty and absorb surrounding flavors.

Ingredients:

8 oz lean ground beef

1 cup yellow lentils, cooked until soft and dry

1 large onion, finely chopped

2 large potatoes, boiled and mashed

½ tbsp black pepper, freshly ground

3 tbsp spring onion (or scallions), finely chopped

3 tbsp coriander, parsley or chives, finely chopped

4 tbsp Carotino Oil

2 egg whites

1 cup bread crumbs

Cooking Instructions:

1. Mix all of the ingredients together except for the egg whites and bread crumbs. Form into round balls each weighing about ¼ lb.

2. Roll the balls in egg whites and then bread crumbs. Press down gently to flatten into patties.

3. Heat a non-stick pan with Carotino oil and fry the patties slowly until golden brown.

4. Serve on whole wheat buns with cucumbers, tomatoes and your favorite condiments.

Makes 8 – 10 burgers
