Ingredients
- 3 tablespoons Carotino Oil
- 450g/16 oz cooked salmon fillet, skinless and boneless
- 450g/16 oz mashed potatoes
- 25g/0.9 oz melted butter
- 1 egg, lightly beaten
- 150g/5.3 oz dried breadcrumbs
- 10ml whole grain mustard
- 1 tablespoon plain flour
- 1 tablespoon chopped dill
- 1 tablespoon chopped parsley
- 1 teaspoon lemon juice
- Salt and pepper to season
Method
Mash up the cooked salmon with the back of a spoon, put it in a bowl and mix it with the mashed potato, melted butter and mustard. Stir well before adding the lemon juice fresh dill and parsley. Season with salt and pepper according to taste and mix thoroughly. Divide the mixture into 8 equal portions and roll each into a ball shape before flattening them to make patties. Sprinkle the fish cake patties with flour, then dip them into the egg and coat with breadcrumbs, making sure they are all evenly covered.
Heat the Carotino oil in the frying pan until it is very hot, then fry the fish cakes in batches of 2 until each one is crisp and golden. After removing from the pan, drain on kitchen paper and get ready to serve with the veg of your choice.
